Salmon Cakes
 

1 - 7 1/2 ounce can salmon, drained and flaked
1/3 cup of saltine cracker crumbs
1 egg, slightly beaten
2 tablespoons of chopped onion
2 tablespoons of milk
1 tablespoon of lemon juice
2 tablespoons butter or margarine

In medium bowl, combine all ingredients except the butter, and blend well.
Shape the mixture into 4 patties.
Melt the butter in a skillet and fry the patties on both sides until golden brown and heated throughout.
