Shuck Beans Or Leather Britches
 (Dried Green Beans)

A popular way to preserve fresh green beans for the winter was to “string” them with a needle and thread and hang them up to dry. Once they were dried they would keep for a long time, also drying the beans gives them a wonderful smoked flavor when cooked.

Wash and dry fresh green beans. Remove the ends and the strings. Use a large darning needle with heavy white thread and pierce bean near the middle of each, pushing them along the thread so that they are about 1/4 inch apart. Hang the “stringed” beans up in a warm, well ventilated place to dry.
They will shrivel up and turn greenish gray.

When cooking in the winter, as my mother did, cover with water and soak overnight, drain, add new water and parboil slowly for 30 minutes.
Drain again.
Add more water and a ham hock or salt pork and cook until tender.
